Types of Honey We Produce

"Imagine yourself as a honey bee...dancing from flower-to-flower collecting sweet nectar!"  Flowers from different regions of Texas help produce many complex flavors in our honey...this is why we harvest from a variety of locations so our customer can enjoy these delicious flavors!

Our Cypress apiary is vital to the success of No Bee Left Behind and our most sought after honey is produced here at this location 

Why our Cypress Honey is the best!

Each year, with the help of our honey bees, we harvest honey in Cypress, Texas.  Generally, we keep several very strong bee hives at this location and periodically takes these hives out of the suburbs and move them to Pattison, TX where they have more room to spread their wings.

We harvest several times a year in Cypress usually Early Spring, Mid Summer, Late summer, and the Fall.  Some beehives do not get harvested every year and when we harvest these after 1 Year we call this our 4-season honey.  Because we live in the suburbs the honey produced is truly unique every season.  We call this our Urban or Backyard Honey!

When we harvest our Early Spring honey this comprises of flowers from over the winter the honey bees found to snack on such as mistletoe and clover.  Our Mid Summer harvest comprises of every spring flower including clovers, ivy's and any backyard plants.  Our Late Summer harvest is just after the Chinese Tallow blossoms.  The Tallow tree is an evasive species brought to America by Ben Franklin.  It has spade leafs and green balls after their blossoms die and grows just about everywhere a tree could possible grow.  This tree produces a large amount of nectar for the honey bees.  The Fall harvest is usually pretty stinky, and sometimes pungent because the Golden Rod flower which blossoms this time of year.  Folks either love or dislike the Fall Honey.  The bees snack on a variety of plants throughout the year but they do seem to have their favorite flowers!

   Pattison, TX - Apiary

If you take HWY 529 westward from HWY 99 about 15 minutes...that is Pattison, TX.  The Apiary is halfway between Hempstead and Brookshire and the surrounding area is largely rural/country living.  Many of the sweet flowers the honey bees find so comforting in the Cypress Apiary do not exist in this Apiary.  The honey at this locations is generally lighter in color than the honey produced in Cypress.  We call this honey our Wildflower Honey.

 

The comb honey we harvest usually comes from this location as we have 5 top bar bee hives we take care of for the farmer who owns the property.  The top bar bee hives produce limited honey as the comb always has to be destroyed in order to harvest it.  This is one reason beekeepers favor Langstroth Hives over Top Bar Hives.

Some folks enjoy a honey that looks lighter in color and prefer to know the bees are only foraging on Wildflowers, while others may prefer to have honey from bees who visit neighborhood flowers.

   Shiner, TX - Apiary

Somewhere along our adventurous path of beekeeping we were led to Shiner, TX to free some bees and we gave them a new home (brand new hive box).  On top of that, we created a new beekeeper, a Cypress and Shiner native, Travis Bollom.  He currently has 2 well sustained beehives and is welcoming us to expand to this location in 2019.  We will have some very limited, and tasteful Shiner Honey this year if we are able to get it out of that city before people buy it all up :)

This location should produce enough honey we can harvest one or two times a year (a summer harvest and possibly a fall one).
